Ingredients

  • 1 1/2 cups tapioca flour
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded parmesan cheese
  • 1/2 cup milk
  • 1/3 cup olive oil
  • 1 tsp salt
  • 1 egg

Instructions

  • Preheat oven to 375°F (190°C).
  • Blend egg, milk, oil, salt, and both cheeses until smooth.
  • Add tapioca flour in thirds, blending after each addition until smooth.
  • Grease mini muffin pan with butter.
  • Fill each cup halfway. Optional: sprinkle extra cheese on top.
  • Bake for 15 minutes or until golden and puffed.
  • Let cool for 5 minutes before serving.

  • Store in an airtight container at room temp for 2 days or refrigerate up to 5.
