- 1 1/2 cups tapioca flour
- 1/2 cup shredded cheddar cheese
- 1/2 cup shredded parmesan cheese
- 1/2 cup milk
- 1/3 cup olive oil
- 1 tsp salt
- 1 egg
Preheat oven to 375°F (190°C).
Blend egg, milk, oil, salt, and both cheeses until smooth.
Add tapioca flour in thirds, blending after each addition until smooth.
Grease mini muffin pan with butter.
